Land of the Goat Chicken Rolls
preparation
Preheat oven 425˚ F
1- Gently pound and flatten each chicken breast.
2- Evenly layer on the cheese, sun dried tomatoes, basil and garlic to each breast.
3- Roll each one up, place thefoodloop (2-3) around rolled chicken and cinch
tight to secure closed. NOTE: tuck tail ends under the cord, this adds extra grip on slippery
meat, keeps the cord from getting pulled from the cavity and makes for easier handling during
cooking.
4- Heat oil in ovenproof pan on med-high heat and brown chicken rolls.
Note: be sure thefoodloop ends do NOT hang over the pan edge.
5- Bake for 15 min. at 425˚ F in the oven to finish cooking. Let cool for a few minutes.
6- Remove thefoodloops by pulling up to unsnap or uncinch.
7- Deglaze pan with wine, reduce heat, whisk in butter, pour over rolls and
serve with a favorite sidedish. Serves 4.
